Let’s make the pizza crust.
Whisk the two eggs in a small bowl.
Add in 1 tablespoon of heavy whipping cream and 2 tablespoons of water. Whisk until well blended then add the 1 ounce of pork rind Panko and mix well.
In the skillet of your choice, set the temperature to a low heat and grease the pan well with butter or Ghee.
Pouring in the mixture with a spoon or spatula smooth out the mixture evenly on the bottom of the pan.
Cook on a low heat until the mixture firms up and the edges start to get crispy, about 5 minutes on a low heat.
With a thin spatula run it around the edges to make sure that nothing is sticking and flip the pizza crust over to cook the other side.
Cook on that side for 3 to 5 minutes until your crust is firm.
Removed from the skillet and place on a baking sheet to cool.
Let’s put the pizza together.
When the crust is cooled, add either your Alfredo sauce or marinara. Sprinkle on some mozzarella cheese.
Add the proteins of your choice. You can’t really go wrong here; any protein is really good on pizza. Top with a sprinkle more of mozzarella cheese to hold it all together. You can even add Parmesan cheese, cheddar or Gouda. Make this pizza your own.
Preheat your oven to 350°.
Set the sheet with pizza on the top rack and bake for about two minutes until the cheese starts to melt. Then set your oven to broil and watch very closely till the cheese starts to brown. Do not walk away from the broil setting as just a few seconds can be the difference between a piping hot bubbling pizza and a burnt hockey puck.
Shut the oven off and pull the pizza out immediately.
Let the pizza cool for about a minute before trying to cut it with a pizza cutter.
I hope you enjoy this delicious pizza that even the kids will love. It’s gluten-free and great for satisfying that pizza craving while trying to eat healthy.
