Ground Chicken Pizza Crust / Gluten Free / Carnivore / Animal Based / Low Carb / Keto 

 

This is a gluten-free recipe. There is no almond flour. This is carnivore if you use Alfredo sauce and Animal Based if you use a clean BBQ sauce. It’s a great option for people who are on Carnivore, Animal based or Keto. This recipe will make a 12-inch crust with rolled edges like hand tossed pizza or a 14-inch thin crust. 

 

The ingredient you will need are: 

For the Crust: 

2 Cup of Pork Rind Panko (About 5 oz). 

1 Table spoon of melted Butter or Ghee. 

1 Pound of Ground Raw Chicken. 

3 Eggs. 

1 Table Spoon of Italian Seasoning. (Optional). 

¼ teaspoon of Salt. 

Food Processor with large chopping / blending blade and dough blade. 

A sheet of large parchment paper. 

Pizza baking stone or pan. 

Large dinner plate. (optional). 

Non latex gloves (optional). 

 

The toppings we used in this video were: 

2 Cups Mozzarella cheese shredded. 

1 Cup of Parmesan Cheese. 

A grilled chicken breast. 

6 slices of cooked crispy thick cut bacon. 

2 Table spoons of clean BBQ Sauce of your choice. 

 

 

Let’s get started on this wonderful recipe that I think you will be surprised at just how good chicken and pork rind panko are as a crust for pizza! 

 

Melt 1 Table spoon of butter or ghee and set to the side. 

Add 1 pound of ground chicken to the food processor. 

Crack the 3 eggs in a small bowl and then add them to the food processor. 

 

Now add the salt and Italian seasoning to the food processor. 

  

Add in the melted butter or ghee.  

 

Put the lid on your food processor and blend till it is smooth like a paste. 

 

Take out your chopping blade and add the dough blade to fold in the pork rind panko or you can fold it in by hand. 

 

Add the pork rind panko and fold it in till it makes a dough ball. 

 

You may want to put on gloves at this point or be sure and wash your hands well after making the crust. This is raw chicken you are dealing with. 

 

Lay out a piece of large parchment paper on top of your pizza stone or baking pan and start pressing out the pizza crust on the paper. Work evenly and in a circular pattern to get an even circle. For tips and a visual please watch the video on this page. 

 

Flatten out the crust to your desired thickness and size.  

 

A tip to get that perfect circle crust is to use a large circular dinner plate and set it over your crust. Cut or pinch off any excess crust and add back to the middle and flatten back into the crust. This will give you that beautiful round crust like a pro! 

 

Pre heat oven to 375 degrees.  

 

Place pizza crust still on parchment paper on the baking stone or baking pan and slide in the middle rack of the oven.  

 

Bake for about 10 minutes until your crust starts getting lightly brown and firm.  

 

Take out the crust leaving it on the parchment paper and stone or pan.  

 

Let crust cool for 5 minutes.  

 

Add your cheese first then topping of your choice. We made BBQ chicken bacon pizza in this video.  

 

Drizzle some sauce on the toppings then add a sprinkle of more cheese.  

 

Stick pizza still on parchment paper and stone or baking pan back in oven for about 5 minutes. You just want to heat up the ingredients and melt the cheese. We like our cheese a little brown so you can also give it a quick broil, but don’t walk away, it only takes seconds. 

Remove from oven and let cool for 5 minutes before cutting into this delicious favorite of ours with a pizza cutter or good sharp knife.  

 

The crust is firm, even in thin crust and so delicious. Your kids and grandkids will also enjoy this healthier version of pizza and want more!
